  • 1/2 c. sugar
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/8 tsp. salt
  • 1 large egg
  • 1 c. carrot, shredded
  • 1/2 c. canned pineapple in juice
  • 1 Tbsp. vegetable oil
  • 1 tsp. vanilla extract

Directions

    Sift together into a mixing bowl sifted all-purpose flour, sugar, baking powder, baking soda, ground cinnamon and salt.

    Add oil, egg, finely shredded carrots, crushed pineapple with juice and vanilla.

    Mix until moistened; beat 2 minutes at medium speed on electric mixer.

    Spray an 8 x 8 x 2-inch baking pan with nonstick spray coating.

    Pour batter evenly into pan.

    Bake in a 350° oven for 20 to 25 minutes or until a toothpick inserted near the center of the cake comes out clean.

    Cool on wire rack.
