- 1 Tbsp. grated Mozzarella cheese
- 1 Tbsp. butter, softened
- 3 eggs, separated
Directions

1Preheat oven to 375°.

2Combine carrots, sugar, butter, cheese and egg yolks.

3Beat egg whites until soft peaks form; fold gently into carrot mixture.

4Pour into greased ovenproof dish and bake for about 1 hour.
