Ingredients

  • 1/2 c. margarine
  • 3/4 c. raisins
  • 1 1/2 c. grated carrots
  • 1 egg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. vanilla essence
  • 1/2 c. grape juice
  • 1/2 c. flour
  • 1/2 c. sugar or honey
  • 2 tsp. baking powder

    Cream margarine.

    Add beaten egg, raisins, grated carrots and vanilla essence; mix well.

    Sift dry ingredients and add to first mixture.

    Stir in grape juice last and mix well.

    Pour into greased, floured pan and bake at 350° for 40 to 45 minutes or until done.
