- 4 or 5 large carrots, scraped and sliced
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- pinch of ground nutmeg
- 1 egg, slightly beaten
- 1 Tbsp. fresh minced parsley
- peanut oil
- powdered sugar (optional)
Directions

1Cook carrots, covered, in a small portion of boiling salted water for 15 minutes, or until tender.

2Drain.

3Mash carrots; let cool.

4Combine a cup mashed carrots and the next 7 ingredients; stir well.

5Heat 1 inch of oil in a large skillet to 325°.

6Drop carrot mixture by tablespoonfuls into hot oil; cook until golden, turning once.

7Drain on paper towels.

8Sprinkle with powdered sugar, if desired.

9Serve immediately.

10Yields 1 1/2 dozen.
