  • 1 c. Crisco
  • 1/2 c. brown sugar
  • 1 c. carrot, grated
  • pinch of salt
  • 1 tsp. lemon juice
  • 1/2 tsp. baking soda, mixed with 1 tsp. water
  • 1 1/4 c. flour
  • 1 egg, divided
  • 1 tsp. baking powder

Directions

    Cream Crisco, sugar and egg yolk.

    Add carrot, salt and lemon juice.

    Add baking soda with water, then flour with baking powder. Mix well and add beaten egg white.

    Pour into greased 6 cup mold (a Bundt cake pan).

    Bake at 350° for 45 minutes.

    Serve hot; can be frozen, unbaked.
