Ingredients
- 3 c. cooked, mashed carrots (about 1 1/2 lb.)
- 1 1/2 c. cracker crumbs
- 1 1/2 c. light cream
- 1 c. (4 oz.) shredded Cheddar cheese
- 1/3 c. butter or margarine, melted
- 1 small onion, grated
- 1 1/2 tsp. sugar
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 eggs
Directions

1Combine all ingredients except eggs in a large bowl; mix well and set aside.

2Beat eggs until frothy and thickened.

3Gently fold eggs into carrot mixture.

4Spoon mixture into a well buttered 1 1/2-quart rind mold.

5Bake in a preheated 350° gas oven 45 minutes.

6Remove from oven; cool slightly.

7Invert carrot ring onto serving platter.
