  • 8 cups sliced carrots
  • 3 cups fresh breadcrumbs
  • 2 cups cheddar cheese, shredded
  • salt, black pepper, and ground nutmeg to taste
  • 2 egg whites
  • 1 cup corn flakes, crushed
  • fresh parsley sprig

Directions

    Preheat oven to 350F.

    Steam carrots for about 10 minutes or until soft.

    Drain and mash well.

    Add breadcrumbs, cheese and seasonings.

    Beat egg whites until stiff; fold into carrot mixrture.

    Shape mixture into 24 rolls that are each about 2-inches long.

    Roll in crushed cornflakes.

    Place on a nonstick or lightly greased baking sheet.

    bake in preheated oven for about 20 minutes, or until browned.
