- 8 cups sliced carrots
- 3 cups fresh breadcrumbs
- 2 cups cheddar cheese, shredded
- salt, black pepper, and ground nutmeg to taste
- 2 egg whites
- 1 cup corn flakes, crushed
- fresh parsley sprig
Directions

1Preheat oven to 350F.

2Steam carrots for about 10 minutes or until soft.

3Drain and mash well.

4Add breadcrumbs, cheese and seasonings.

5Beat egg whites until stiff; fold into carrot mixrture.

6Shape mixture into 24 rolls that are each about 2-inches long.

7Roll in crushed cornflakes.

8Place on a nonstick or lightly greased baking sheet.

9bake in preheated oven for about 20 minutes, or until browned.

10Makes 24 rolls ro 12 servings.
