- 1 1/2 c. shredded carrots
- 1 1/2 v. unpeeled red apple, chopped
- 1 Tbsp. finely chopped onion
- 2 Tbsp. vegetable oil
- 2 Tbsp. pineapple juice
- 1 1/2 tsp. cider vinegar
- 1/8 tsp. salt
- 1/8 tsp. ground ginger
- 2 Tbsp. chopped pecans or walnuts
Directions

1Combine carrot, apple and onion in a bowl; toss gently.

2Set aside.

3Combine oil, juice, vinegar, salt and ginger, stirring well.

4Pour dressing over carrot mixture; toss gently.

5Cover and chill.

6Add pecans and toss gently just before serving.
