- 4 c. fresh shredded carrots
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 c. diced celery
- 1 c. raisins (optional)
- 3/4 c. mayonnaise or Miracle Whip
Directions

1Mix carrots with sugar and salt.

2Let stand 1 hour.

3Put in colander or large strainer.

4Add celery and raisins.

5Mix together.
-
6Stir in mayonnaise and mix well.

7Let stand over sink 15 - 20 minutes.

8Also good to add a small can of crushed pineapple, drained.

9Put in bowl, cover and refrigerate.
