Carrot Salad

  • 4 c. fresh shredded carrots
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 c. diced celery
  • 1 c. raisins (optional)
  • 3/4 c. mayonnaise or Miracle Whip

Directions

    Mix carrots with sugar and salt.

    Let stand 1 hour.

    Put in colander or large strainer.

    Add celery and raisins.
  5. 5
    Mix together.

    Stir in mayonnaise and mix well.

    Let stand over sink 15 - 20 minutes.

    Also good to add a small can of crushed pineapple, drained.

    Put in bowl, cover and refrigerate.
