- 1/4 c. onion, finely chopped
- 4 c. carrots, thinly sliced
- 3 c. vegetable broth
- 3/4 c. water
- 1/4 tsp. ground nutmeg
- 1 1/2 Tbsp. creamy peanut butter
- 1/4 c. heavy cream
Directions

1Boil together the onion, carrots, broth, water and nutmeg. Simmer, covered, until carrots are tender.

2Cool enough to puree in blender.

3Puree until carrot mixture is smooth.

4Add peanut butter while pureeing.

5Pour into saucepan and stir in cream. Reheat soup, stirring often and serve at once.

6Serves 6.
