Carrot Soup

- 3 Tbsp. butter
- 4 c. sliced carrots
- 1 c. chopped onion
- 1/8 tsp. thyme
- 8 c. chicken broth
- 1/3 c. brown rice, uncooked
- salt and pepper to taste
Directions

1Melt butter in large pan over low heat.

2Stir in onion, carrot, thyme, salt and pepper.

3Cover and cook 10 minutes.

4Add broth and rice.

5Simmer until rice is tender 40 to 50 minutes. Put mixture in blender a little at a time.

6Blend until smooth. Serves 8.
