- 12 carrots
- 2 c. onions
- 3 Tbsp. butter or margarine
- 1 1/4 c. orange juice
- 1 qt. chicken stock
- optional garnish: plain yogurt, chopped parsley
Directions

1Slice carrots (in Cuisinart, if available).

2Cover with water; simmer for 40 minutes, but don't boil.

3Drain.

4Dice or shred onions (in Cuisinart).

5Saute in butter or margarine in large pot. Add chicken stock and carrots.

6Simmer for 40 minutes.

7Puree in Cuisinart (or blender).

8Add 1 1/4 cups orange juice.

9Serve hot or cold with dollop of yogurt and parsley.

10Serves 4.
