Carrot Soup

Ingredients

  • 1 lb. carrots, peeled and sliced
  • 1 medium size onion, chopped
  • 1 (14 1/2 oz.) can vegetable broth
  • 1 c. fat free Ricotta cheese
  • fresh dill sprigs (optional)

Directions

    Combine carrots, onion and broth.

    Cover and heat to boiling over high heat.

    Reduce to low and simmer until tender, about 15 minutes.

    Remove from heat, uncover and cool mixture 10 minutes. Set aside about 8 carrot slices for garnish.

    Pour mixture into blender or food processor.

    Blend or process until finely chopped. Increase speed to blend or process until smooth.

    Stop blender/processor and add cheese to carrot mixture.

    Blend/process soup mixture until cheese is smooth.

    Pour in bowls and garnish with carrot slices and dill sprigs.
