Ingredients
- 2 c. all-purpose flour
- 1/2 c. nonfat dry milk
- 1/2 c. coarsely chopped nuts
- 1/3 c. Sugar Twin
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3 eggs, slightly beaten
- 2 c. shredded or grated carrots
- 3/4 c. vegetable oil
- 1 tsp. vanilla flavoring
Directions

1Preheat oven to 350°.

2Spray loaf pan with Pam.

3In a large mixing bowl, combine dry ingredients and blend.

4Stir in remaining ingredients together; add to dry ingredients and beat only until well mixed.

5(Batter is very thick.) Pour into prepared pan.

6Bake 1 hour until golden brown and toothpick inserted in center comes out clean.

7Turn loaf out onto rack to cool.
