- 6 c. chicken stock
- 1 1/2 lb. carrots, cut up
- 1 onion, minced
- 3/4 stick butter, unsalted
- 1/2 c. heavy cream
- 1 1/2 Tbsp. fresh thyme, minced
- nutmeg to taste
Directions

1In a large saucepan, combine the stock and the carrots.

2Bring the stock to a boil.

3Simmer the carrots, covered for 20 minutes or until they are tender.
