Carrot Tops Spaghetti

Ingredients

  • 150 grams Spaghetti (thin type)
  • 1 from 2-3 carrots Carrot leaves
  • 2 small or 1 medium Carrot
  • 1 clove Garlic
  • 2 tbsp Olive oil
  • 1 dash Red chili pepper (togarashi)
  • 1 Parmesan cheese
  • 1 pinch Salt

Directions

    Sprinkle a pinch of salt onto the carrot leaves and (optionally) parboil.

    Wring out the excess moisture and cut into small pieces.

    Cut the carrot into thin, long strips (use a slicer).

    Roughly chop up the garlic and smash with the knife.

    Slice the red chili pepper.

    Boil the spaghetti.

    Heat olive oil in a frying pan and saute the garlic over low heat until fragrant.

    Add the chili pepper.

    Cook the carrot and the leaves.

    Add the spaghetti and mix.

    Season with salt and pepper.

    Optionally top with parmesan cheese.
