  • 4 9/16 cups carrots
  • 1 cup water
  • orange juice
  • zest
  • 3/4 cup honey
  • 1 1/4 cups sugar
  • shredded coconut as needed

Directions

    Grate carrots, add water, cook 10 minutes.

    Add sugar, honey and the juice and orange zest.

    Cook until thickened, about 45 minutes. low heat.
