Carrot Walnut Bread

- 1 c. vegetable oil
- 3/4 c. sugar
- 1 tsp. vanilla
- 3/4 c. whole wheat flour
- 3/4 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 c. grated carrots (3 large)
- 1 c. chopped walnuts
Directions

1Grease and flour a 9 x 5 x 3-inch loaf pan.

2Combine oil, sugar, eggs and vanilla in large bowl.

3Sift flour, baking soda, cinnamon and salt together.

4Add to sugar mixture.

5Stir in carrots and walnuts.

6Mix just until blended.

7Turn into prepared pan.

8Bake at 350° for 1 hour, or until center springs back when lightly pressed with fingertip.

9Cool in pan 10 minutes. Turn out onto wire rack; cool completely.
