  • 1 lb. carrots or 2 cans, sliced and drained
  • 1/4 c. raisins
  • 1/4 c. butter
  • 3 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1/4 tsp. ginger
  • 1/4 c. almonds

    Cook carrots for 8 minutes; drain.

    Place in 1-quart baking dish.

    Stir in raisins, butter, honey, lemon juice and ginger. Bake at 375° for 35 minutes.
