- 1 lb. carrots, peeled and cut into 1/4-inch rounds
- 3 Tbsp. unsalted butter
- 1/4 tsp. salt
- 1/2 tsp. sugar
- 1 1/2 c. water
- 1/2 c. heavy cream
- 1 Tbsp. chopped parsley
Directions

1Put carrots, butter, salt, sugar and water in a saucepan. Cook, uncovered, over medium heat until carrots are tender and water has almost evaporated, about 15 minutes.

2Stir in cream and parsley.

3Cook gently for about 2 minutes more, until cream is warm.

4Serve hot.
