- 2 chicken breasts
- 1 Tbsp. oil
- 2 carrots, sliced
- 1 head broccoli, trimmed into florets
- 1 flat can sliced water chestnuts
- 2 c. chicken broth
- 2 Tbsp. soy sauce
- 2 Tbsp. cornstarch
- 1/4 c. water
- 1 Tbsp. sugar
- 3 oz. cashews
Directions

1Cut chicken into 1-inch cubes. Brown chicken on both sides in 1 tablespoon oil. When chicken is thoroughly cooked, drain chicken and add chicken broth and carrots. Cover and cook for 5 minutes. Add broccoli and cook another 5 minutes.

2Mix cornstarch with water, sugar and soy sauce.

3Add to chicken mixture, stirring constantly, until mixture thickens.

4Add cashews and heat just until nuts are warm.

5Serve over cooked rice.
