- 1 1/2 Tbsp. arrowroot or cornstarch
- 2 c. hot water
- 1 tsp. vanilla
- 1/8 tsp. salt
Directions

1Blend cashews and arrowroot with hot water, then put in a saucepan and add vanilla and salt.

2Cook until thick, stirring constantly.

3Cool and use as a topping for pie, etc.

4Fold in blended or finely chopped dried fruit such as apricots, apples, dates, etc. to make topping for waffles or French toast.

5May be used like whipped cream.
