Ingredients

  • 4 cups vanilla ice cream
  • 2 tbsp chopped green candied cherries, plus extra to decorate
  • 2 tbsp chopped red candied cherries, plus extra to decorate
  • 2 tbsp chopped dried apricots
  • 2 tbsp chopped dried pineapple
  • 1/3 cup cocoa powder
  • 1/3 cup sliced almonds, toasted
  • 1/2 tsp almond extract

Directions

    Line a 5x8 inch loaf pan with plastic wrap. Scoop 1/3 of the ice cream into a large bowl. Let soften slightly then stir in fruit. Transfer to prepared pan and smooth surface. Cover and freeze until firm.

    Place 1/2 of remaining ice cream into a bowl and let soften. Sift in cocoa and mix well. Spread over fruit layer and smooth surface. Cover and freeze until firm.

    Let remaining ice cream soften. Stir in almonds and almond extract. Spread over chocolate layer and smooth surface. Cover with plastic wrap and freeze overnight.

    When ready to serve, invert pan onto a chilled serving plate. Discard plastic wrap. Serve sliced, decorated with candied fruit.
