Ingredients
- 1 stick margarine
- 1 small onion, chopped
- 1 small bell pepper, chopped
- 1 can cream-style corn
- 1 can whole kernel corn
- 1 box Jiffy cornbread mix
- 2 eggs, beaten
- 1 large sour cream
- 2 c. shredded cheese
Directions

1Melt margarine.

2Saute onions and bell peppers.

3Mix cornbread mix with beaten eggs and both cans of corn.

4Then add that to the sauteed onions and bell peppers.

5Pour into greased 9 x 13-inch casserole dish.

6Bake at 375° for 20 minutes.

7Whip sour cream with fork until creamy and spread on top of casserole.

8Then spread the 2 cups cheese on top of sour cream.

9Return to oven (lower to 350°) and bake 10 to 15 minutes longer.
