- 10 medium Russet potatoes, peeled
- salt to taste
- 8 oz. cream cheese, softened
- 2/3 c. sour cream
- 1/2 c. minced green onions
- 8 slices bacon, crisp-fried and crumbled
- pepper to taste
- 2 Tbsp. melted butter
- 2 Tbsp. chopped parsley
Directions

1Cook potatoes in salted water to cover in saucepan until tender; drain.

2Shake over low heat until dry.

3Blend cream cheese and sour cream in mixer bowl.

4Add hot potatoes, 1 at a time, mixing until smooth after each addition.

5Add green onions, salt and pepper.
