  • 3 Tbsp. Cajun seasoning (use Cajun seasoning mix)
  • 1 c. milk
  • 2 eggs
  • mustard
  • 1 c. cooking oil (preferably peanut oil)

    Mix cornmeal with Cajun seasoning.

    Dip catfish into mixture of milk, eggs and mustard.

    Coat well with cornmeal mixture.

    Heat oil.

    Drop fish into hot oil and cook until golden brown.
