- 4 catfish fillets
- 1/3 c. cooking oil
- 1/4 c. flour
- 1 c. chopped celery
- 4 green onions
- 1/2 c. chopped green pepper
- 2 cloves crushed garlic
- 1 can tomatoes
- 1 c. tomato sauce
- 2 Tbsp. chopped parsley
- salt
- 3 bay leaves
- 1/2 tsp. thyme
- pepper
- 1 Tbsp. brown sugar
- 1 Tbsp. lemon juice
- 1 Tbsp. Worcestershire sauce
- hot pepper sauce
- cooked rice
Directions

1Heat oil in a large pan.

2Add flour and stir until brown.

3Add some water gradually with stirring.

4Add all ingredients, except fish and rice.

5Cover and simmer until vegetables are tender.

6Add fish and simmer additional 10 minutes.

7Serve over rice.
