Ingredients
- 1 lb. catfish fillets
- 1/2 c. chopped celery
- 1/2 c. chopped green onions
- 1/2 c. chopped green peppers
- 2 garlic cloves, chopped
- 2 Tbsp. vegetable oil
- 2 c. chicken broth
- 1 c. tomatoes, undrained
- 10 oz. pkg. okra
- 1/4 tsp. red pepper
- 1 tsp. gumbo file
- salt and pepper to taste
- 1 1/2 c. hot rice
Directions

1Cut fish into 1-inch pieces.

2Cook celery, pepper, onions and garlic in vegetable oil in Dutch oven until tender.

3Add broth, tomatoes, okra, red pepper, file, salt and pepper.

4Cover and simmer for 20 minutes.

5Place fish on vegetables.

6Cover and simmer 15 minutes or until fish flakes easily.

7Serve with hot rice.
