Catfish Mull

  • 5 lb. catfish (I prefer filets)
  • 5 lb. onions
  • 1 doz. large potatoes
  • 1 lb. fat back
  • salt and pepper to taste
  • Tabasco to taste
  • 1 stick oleo

Directions

    Fry fat back, preferably in cast-iron pot with lid.

    Remove fat back from pot.
  3. 3
    Put a layer of onions, layer of fish, etc. Lay whole peeled potatoes on top.

    Add seasoning and oleo.

    Put lid on pot; cook until potatoes are done.

    Will serve at least 12 people.
