- 5 lb. catfish (I prefer filets)
- 5 lb. onions
- 1 doz. large potatoes
- 1 lb. fat back
- salt and pepper to taste
- Tabasco to taste
- 1 stick oleo
Directions

1Fry fat back, preferably in cast-iron pot with lid.

2Remove fat back from pot.

3Put a layer of onions, layer of fish, etc. Lay whole peeled potatoes on top.

4Add seasoning and oleo.

5Put lid on pot; cook until potatoes are done.

6Will serve at least 12 people.
