- 8 catfish fillets
- 16 Tbsp. thick and chunky salsa
- 1 large Vidalia onion, cut in rings
- 1 large bell pepper, cut in rings
- salt and pepper
Directions

1Salt and pepper fillets.

2Top each with 2 tablespoons of salsa, 1 ring each of bell pepper and onion.

3Wrap each fillet in heavy-duty tinfoil.

4Put catfish wrapped in tinfoil on charcoal grill over hot coals and cook 30 to 50 minutes, depending on heat of grill.

5Spray foil lightly with Pam before putting fish on it. On our grill they cooked in 30 minutes and were delicious.
