  • 1 medium head cauliflower, cooked halfway
  • 2 Tbsp. margarine
  • 2 Tbsp. (heaped) cornstarch
  • 3 c. milk
  • 1 tsp. hot English mustard
  • salt and pepper to taste
  • 1 c. seasoned bread crumbs
  • 4 oz. shredded Cheddar cheese

Directions

    Strain and break cauliflower into pieces, then make 1 recipe of white sauce.

    Put margarine and cornstarch in a pan; stir until melted.

    Beat in milk, a bit at a time, until it has a custardy consistency (use a wooden spoon for this).

    Add salt, pepper and mustard; pour over cauliflower in baking dish.

    Sprinkle bread crumbs and cheese on top.

    Bake at 350° until cheese is melted and golden brown.
