- 1 medium head cauliflower, cooked halfway
- 2 Tbsp. margarine
- 2 Tbsp. (heaped) cornstarch
- 3 c. milk
- 1 tsp. hot English mustard
- salt and pepper to taste
- 1 c. seasoned bread crumbs
- 4 oz. shredded Cheddar cheese
Directions

1Strain and break cauliflower into pieces, then make 1 recipe of white sauce.

2Put margarine and cornstarch in a pan; stir until melted.

3Beat in milk, a bit at a time, until it has a custardy consistency (use a wooden spoon for this).

4Add salt, pepper and mustard; pour over cauliflower in baking dish.

5Sprinkle bread crumbs and cheese on top.

6Bake at 350° until cheese is melted and golden brown.
