Cauliflower Casserole

  • 16 ounces cauliflower, frozen
  • 2 eggs, beaten
  • 12 cup parmesan cheese
  • 8 ounces mozzarella cheese, shredded
  • 15 ounces ricotta cheese
  • 4 tablespoons dry breadcrumbs, divided
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 12 cup dry breadcrumbs
  • 2 tablespoons parmesan cheese

Directions

    Cook cauliflower until tender.

    With a fork crush caulifower into smaller pieces but don't puree.

    In a large bowl combine cauliflower, eggs, 1/2 cup Parmesan cheese, mozzarella, ricotta cheese, 2 tablespoons bread crumbs, salt and pepper.

    Preheat oven to 350 degrees Fahrenheit.

    Grease a 12x8 pan; sprinkle with 1/2 cup bread crumbs.

    Pour mixture into prepared baking pan.

    Sprinkle with remaining Parmesan cheese, and remaining 2 tablespoons bread crumbs.

    Cover with foil and bake for 30 minutes.

    Remove foil and bake 30 minutes more until browned.
