- 1 medium cauliflower
- 1 1/2 c. half and half
- 3 eggs, beaten
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. shredded sharp Cheddar cheese
- 1 red pepper, sliced
- paprika
Directions

1Rinse cauliflower and cut into flowerets.

2Place in a microsafe shallow dish (in single layer just to fit).

3Microwave on High power for 4 minutes, covered tightly.

4In a bowl, combine the half and half, eggs, salt, pepper and cheese.

5Pour mixture over the steamed cauliflower.

6Add sliced red pepper.

7Sprinkle with paprika and a little extra cheese.

8Microwave on High power, uncovered, for 3 minutes.

9Stir slightly to blend outer cooked custard with inner custard.

10Microwave for 3 to 4 minutes longer on High power.

11Cover tightly.

12Microwave on High power for 3 to 4 minutes, until custard is set.

13Remove.

14Uncover carefully and serve.
