Cauliflower Delight

  • 1 large head cauliflower, about 2 lbs
  • water
  • salt
  • 4 -6 slices bacon
  • 1 green pepper, seeded
  • 3 tablespoons chopped parsley

Directions

    Wash and trim cauliflower and remove most o fthe outer leaves.

    Put whole head in a pot filled with 2-3 inches of boiling salted water-cover.

    Steam cauliflower about 15 minute or until tender crisp, not overcooked.

    Meanwhile, cut the bacon and green pepper into strips.

    Saute bacon until soft or crisp to your liking.

    Drain and keep warm.

    Saute pepper in same pan with bacon drippings.

    Place cooked cauliflower on a serving dish.

    Top with bacon-pepper mixture.

    Sprinkle with parsley.

    Good served with pork chops, flank steak, broiled fish or chicken.
