- 6 Tbsp. unsalted butter
- 4 cloves garlic, minced
- 4 oz. thinly sliced Prosciutto, cut in thin strips
- 1 head cauliflower, cut in 1/4-inch lengthwise slices
- 1/2 c. chopped, fresh parsley
- 2 Tbsp. all-purpose flour
- 1 1/2 c. heavy or whipping cream
- pinch of cayenne pepper
- salt and freshly ground pepper to taste
- 1 1/2 c. grated Swiss cheese
Directions

1Preheat oven to 350°.

2Melt butter in a large skillet over medium heat.

3Add garlic and saute 2 minutes.

4Stir in the Prosciutto and saute 2 more minutes.

5Add cauliflower and cook just until it begins to lose its crispness, 3 to 4 minutes.

6Stir in flour and then the cream; blend well.

7Season with the cayenne, salt and pepper to taste.

8Heat to boiling and immediately remove from heat.

9Pour the cauliflower into a shallow gratin dish.

10Top with the cheese and parsley.

11Bake until top is lightly browned and bubbling, about 30 minutes.
