Cauliflower Mash

Ingredients

  • 1 head cauliflower
  • 2 carrots
  • 1 spoonfull of softened cream cheese
  • 2 spoonfulls of plain yoghurt
  • 1 tsp of butter
  • 1 dash of salt, pepper and rosemary to taste

Directions

    Clean and chop the cauliflower and set aside

    Set a pot of water over medium high heat
  3. 3
    Once the water is boiling, carefully add your chopped cauliflower and cover the pot.

    Bring once again to a boil
  5. 5
    Then reduce heat to low and add the carrots.

    They should be peeled and roughly chopped.

    You can put more carrots if you want to

    Simmer for 10-15 minutes over low heat or until the cauliflower and carrots are mushy, not crunchy

    Once they are steamed, drain the water.

    Add the butter, yoghurt, cream cheese and seasoning

    Mash with a hand blender until smooth.

    It can be served warm or cold
