- 1 (8 oz.) pkg. frozen cauliflower
- 1/2 c. chopped green pepper
- 1/3 c. chopped onion
- 1 c. shredded low-fat cheese
- 1 c. skim milk
- 3 eggs
- 1/2 c. biscuit mix
- 1/4 tsp. paprika
- 1/8 tsp. pepper
Directions

1Cook cauliflower.

2Drain well and coarsely chop.

3Place on paper towel and squeeze until barely moist.

4Coat a 9-inch pie plate with Pam.

5Layer cauliflower, green peppers, onion and cheese in pie plate.

6Combine remaining ingredients in electric blender. Process 15 seconds or until well blended.

7Pour into pie plate. Bake at 375° for 30 to 35 minutes or until set.

8Let stand 5 minutes.

9Serve and enjoy.
