- 2 c. fresh cauliflower flowerets
- 1/2 c. sliced onion
- 1 clove garlic, minced
- 1 Tbsp. olive oil
- 1 c. frozen or fresh snow peas
- 1 sweet red pepper, cut into strips
- 1/2 c. fresh mushrooms
- 1 tsp. dried oregano
- 1/4 tsp. salt
Directions

1Arrange cauliflower in a steamer basket.

2Place over hot water. Cover and steam 8 minutes; drain and set aside.

3Cook onion and garlic in olive oil in a large nonstick skillet over medium heat, stirring constantly, until tender.

4Add cauliflower, snow peas and remaining ingredients.

5Cook, stirring constantly, until heated. Yields 4 (1-cup) servings.
