Cauliflower Shrimp Salad

  • 1 small head cauliflower
  • 1/2 c. uncooked rice
  • 1 (4 oz.) can shrimp
  • 1/2 green pepper
  • 1 small onion
  • 6 pimento stuffed green olives
  • 1 capful lemon juice
  • dash of hot pepper sauce
  • salt and pepper
  • 1/2 c. mayonnaise

Directions

    Cook rice; set aside.

    Cut shrimp in half if large.

    Chop green pepper and onion.

    Separate cauliflower so flowerets are as tiny as possible.

    Cut olives in slices.

    Mix rest of ingredients. Serve well chilled.
