Cauliflower Shrimp Salad

- 1 small head cauliflower
- 1/2 c. uncooked rice
- 1 (4 oz.) can shrimp
- 1/2 green pepper
- 1 small onion
- 6 pimento stuffed green olives
- 1 capful lemon juice
- dash of hot pepper sauce
- salt and pepper
- 1/2 c. mayonnaise
Directions

1Cook rice; set aside.

2Cut shrimp in half if large.

3Chop green pepper and onion.

4Separate cauliflower so flowerets are as tiny as possible.

5Cut olives in slices.

6Mix rest of ingredients. Serve well chilled.
