Cauliflower Spaghetti

Ingredients
- 1/4 c. olive oil
- 2 Tbsp. butter
- 1 medium cauliflower
- 2 to 3 medium cloves garlic
- 1 bay leaf
- 2 tsp. basil
- 29 oz. tomato puree
- salt to taste
- a lot of black pepper
- 2 c. mixed Parmesan cheese and Cheddar cheese
- 1/2 lb. uncooked thin spaghetti
Directions

1Heat 2 tablespoons oil in skillet.

2Add crushed garlic, bay leaf and basil.

3Saute one minute.

4Add cauliflower and sprinkle with salt and saute until tender.

5(Can add water and cover to steam cauliflower until tender.)

6Add tomato puree and lower heat to a simmer for 15 minutes.

7Cook spaghetti.
-
8Toss with butter and oil and half the cheese mixture.

9Put spaghetti on a platter and pour cauliflower sauce over the spaghetti.

10Top with the other half of the cheese mixture.

11Serve immediately.
