  • 2 diced plum tomatoes
  • 1/3 cup lemon juice
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 chopped scallions
  • 2 tbsp chopped mint
  • 1 chopped fresh parsley to taste
  • 1 salt to taste
  • 1 pepper to taste
