- 1 pound squid, cleaned and sliced
- 2 egg whites
- 3/4 cup all-purpose flour
- 1 tablespoon (or more to taste) cayenne pepper
- Oil for deep-frying: 4 inches of neutral-flavored oil in large heavy pot
- Lime wedges for garnish
Directions

1In a medium bowl, combine squid pieces and egg white, mixing gently but thoroughly.

2Sift together flour and cayenne.

3Drain squid.

4Heat oil to 360 degrees.

5Working in batches, drop a handful of squid into seasoned flour and toss to coat evenly.

6Lift out of flour, shake to remove excess, and drop carefully into hot oil.

7Cook briefly until golden, about 1 to 2 minutes.

8Remove squid from oil with slotted spoon and drain on paper towels.

9Repeat with remaining squid until all are cooked.

10Sprinkle with salt and serve with lime wedges
