Ingredients

  • 2 lb. mixed seafood (shrimp, clams, firm fish)
  • 1 large onion, thinly sliced
  • 1/4 c. chopped cilantro or parsley
  • 2 cans green chilies, finely sliced
  • 3 tsp. olive oil
  • salt to taste
  • pepper to taste
  • lime juice to cover (or mixture of lemon and lime juice)
  • 2 ears of corn, cooked and chopped
  • 2 sweet potatoes, cook

Directions

    Combine all ingredients, except corn and sweet potatoes and refrigerate two hours.

    To serve place in a large dish.

    Garnish with the corn and sweet potatoes.
