  • 7 c. celery, cut up
  • 3 c. green pepper, cut up
  • 7 c. onion, cut up
  • 4 c. canned tomatoes
  • 3 c. light brown sugar
  • 4 c. white vinegar
  • 2 tsp. mustard seeds
  • 2 tsp. turmeric

Directions

    Bring tomatoes to a boil and pour over the vegetables; let stand 10 minutes and drain.

    Meanwhile, boil brown sugar, vinegar, mustard seeds and turmeric.

    Pour this over drained vegetables; cover and simmer 15 minutes.

    Pour into prepared jars, which have been tempered so as not to crack from hot liquid.

    Can use empty mayo jars or whatever.

    Tighten lids and invert until cool.

    Makes 3 1/2 quarts.

    Whatever you do, do not give away; may be kept in refrigerator for up to 1 year, if it lasts that long, as it is delicious.
