- 1 lemon, juice of
- 1/4 cup Dijon mustard
- 2 tablespoons boiling water
- 2 tablespoons olive oil (or a milder oil if you prefer)
- 2 tablespoons white vinegar
- 1/4 teaspoon salt
- 1/3 cup low-fat mayonnaise
- 3 tablespoons fresh parsley, chopped
