- 2 cups prepared fruit (buy about 2 pt. fully ripe red raspberries) Whole Foods 5 ea For $5.00 thru 02/09
- 4 cups sugar, measured into separate bowl
- 1 pouch CERTO Fruit Pectin
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
Directions

1Rinse clean plastic containers and lids with boiling water.

2Dry thoroughly.

3Crush raspberries thoroughly, one layer at a time.

4(Press half of pulp through a sieve to remove some of the seeds, if desired.)

5Measure exactly 2 cups prepared fruit into large bowl.

6Stir in sugar.

7Let stand 10 min., stirring occasionally.

8Mix pectin and lemon juice.

9Add to raspberry mixture; stir 3 min.

10or until sugar is dissolved and no longer grainy.

11(A few sugar crystals may remain.)

12Fill all containers immediately to within 1/2 inch of tops.

13Wipe off top edges of containers; immediately cover with lids.

14Let stand at room temperature 24 hours.

15Jam is now ready to use.

16Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year.

17Thaw in refrigerator before using.
