Ingredients

  • 1 pound red snapper fillets cut into 1 inch pieces
  • 1 teaspoon lemon
  • 1 teaspoon lime zest
  • lemon juice cup freshly squeezed
  • lime juice cup freshly squeezed
  • 1 medium tomato seeded and diced
  • 1 red onion small, finely diced
  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic thinly sliced
  • 1 jalapeno seeded and minced
  • 1 tablespoon cilantro leaves chopped fresh
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon ground cumin toasted and
  • 1 avocado pitted, peeled and diced

Directions

    Combine fish with citrus juice and zest in a ziplock bag and store in your refrigerator in a leak proof container. Allow to marinate for at least 3 and up to 8 hours.

    Drain marinade and combine fish in large bowl with remainder of ingredients. Chill 30 minutes and enjoy!

    Serve with tortilla chips as an appetizer for 8 or meal for 4
