- 4 onions, sliced
- 2 lb. chuck, trimmed and cubed
- 1/2 tsp. freshly ground pepper
- 1/2 tsp. ground cumin
- 4 garlic cloves, minced
- 3 Tbsp. flour
- 1 Tbsp. tomato paste
- 3 Tbsp. vegetable oil
- 1/2 tsp. salt
- 6 Tbsp. red wine vinegar
- 1/2 tsp. turmeric
- 6 bay leaves
- 2 c. beef broth
Directions

1In a large heavy pan, cook onions in oil over moderate heat, stirring until golden.

2In a bowl, combine 3 tablespoons vinegar, salt, pepper and beef.

3Add this to the onions and cook over moderate heat until beef is browned, 10 to 15 minutes.

4Add cumin, turmeric, garlic and bay leaves.

5Stir for 30 seconds.
