Ingredients
- 2 Tbsp. butter
- 1 large onion, chopped
- 2 red peppers, chopped
- 2 green peppers, chopped
- 1 large Serrano chili, chopped
- 7 to 8 ears of corn, kernels sliced off
- 1/2 bunch fresh tarragon, chopped
- 1 tsp. black pepper
- salt to taste
- 1 1/2 Tbsp. sugar
- 1 qt. milk
- 1 qt. water
Directions

1Melt butter in large stock-pot.

2Add onion and saute until translucent.

3Add peppers and cook for 3 to 4 minutes.

4Add corn, cook for 10 minutes.

5Add tarragon, chili, salt, pepper and sugar. Cook 2 minutes.

6Add milk and water.

7Bring to a boil and serve. Serves 8.
