Ingredients

  • 2 Tbsp. butter
  • 1 large onion, chopped
  • 2 red peppers, chopped
  • 2 green peppers, chopped
  • 1 large Serrano chili, chopped
  • 7 to 8 ears of corn, kernels sliced off
  • 1/2 bunch fresh tarragon, chopped
  • 1 tsp. black pepper
  • salt to taste
  • 1 1/2 Tbsp. sugar
  • 1 qt. milk
  • 1 qt. water

Directions

    Melt butter in large stock-pot.

    Add onion and saute until translucent.

    Add peppers and cook for 3 to 4 minutes.

    Add corn, cook for 10 minutes.

    Add tarragon, chili, salt, pepper and sugar. Cook 2 minutes.

    Add milk and water.

    Bring to a boil and serve. Serves 8.
