  • 3 lb. boneless pork roast
  • 1 lb. pinto beans
  • 2 cloves garlic
  • 1 (8 oz.) can diced green chilies
  • 2 Tbsp. chili powder
  • 1 Tbsp. cumin seed
  • 1 tsp. oregano
  • 1 Tbsp. salt
  • garnishes: shredded cheese, chopped onion, shredded lettuce, chopped tomatoes, sliced avocado and sour cream

    Combine in large kettle.

    Cover with water; bring to boil. Cover and simmer about 6 hours.

    Break up meat and cook, uncovered, until thick, about 45 minutes.
